Organic Blueberry Muffin Recipe

These are super yummy and really easy too make. I got the recipe from the Hummingbird bakery and chose to use all organic ingredients were I could.

What you’ll need :
360 g Organic Flour
370 g Caster Sugar
1 tsp Salt
1 1/2 Baking Powder
1/2 tsp of Bicarbonate of Soda
375 ml Organic Buttermilk
A Free Range Organic Egg
1/2 tsp Organic Vanilla Essence
70 g Organic Unsalted Butter
250 g Organic Blueberries

Preheat oven to 170’C
Place the flour, sugar, salt, baking powder & bicarb of soda in a mixing bowl. Mix together by hand or with an electric beater.

Pour the buttermilk, egg & essence into a jug and pour into the flour mixture.

Then pour in the melted butter until you have a smooth mixture.
Finally gently pour in the blueberries and mix with a wooden spoon.

Spoon the mixture into paper cases making sure to only full two-thirds. Then bake in the oven for 20-25 minutes.
